Waffles Recipe

Recipe provided by Anita B. Carroll

The following is the recipe for "soft and thick" waffles.

Makes up to 8-10 Waffles

What You'll Need:

  • 2 cups of flour
  • 1 dash of salt
  • 2 tbsp of sugar
  • 2 dashes of cardemomme
  • 1 1/2 cup of milk
  • 3 eggs
  • the waffle iron which you can buy at any home stores (Macys)from $39.00+.

What to do:

  • Mix all of the dry items (flour, sugar, salt, and cardemomme.
  • Pour in milk slowly (you can add more milk if you like) and make sure you mix it really good and fast to avoid any flour clumps.
  • Now add the eggs, one by one, mix one egg in the mixture, and then mix the other egg in the mixture, and then mix the third egg in the mixture. If your mixture is getting very thin, you can add more flour, but little by little since this can cause flour clumps. You are looking for a medium thick mixture, very much like the American pancake mixture.
  • Let the mixture stand in the fridge for about 25 minutes.
  • Some people like to add melted butter in the mix, but I prefer not to since it add a butter flavor to the waffles.
If you would like to add butter. Do this:
  • Make the mixture as described above.
  • Melt 1 tbsp of butter and chill.
  • Once chilled mix with the mixture, and start baking :0)

If you decide not to add the butter in the mixture you should smear unmelted butter on the waffle iron before each plate, since this mixture will get stuck to the iron if you don't.

One thing that makes it easy to make waffles is that you really don't have to follow the recipe to the teeth. If you like your waffles sweet, you can add more sugar. If you like the cardemomme taste, add more. If you need more or less waffles just increase/decrease the amounts of each item, there are room for sloppyness. I would recommend though for each cup of flour that you add you should also add an egg.

Waffles are my favorite Norwegian treat, and I hope you'll enjoy my recipe.
