Berlinerkranser, also called Little Wreaths or Berliner Wreaths, is one of several types of cookies made for traditional Norwegian Christmas celebrations.

What You'll Need

  • 2 hardboiled (8 minutes) egg yolks
  • 2 raw egg yolks
  • 125 g sugar
  • 300 g wheat flour
  • 250 g butter
  • eggwhites and confectionary sugar (coarse ground) for decorating

What to do

Crumle the hardboiled egg yolks. Whisk inn the raw ones. Whip together eggs and sugar. Add alternately flour and softened butter a little at the time. Let the dough cool off a little. Roll it out into "sausages", cut into 10 cm pieces. Wrap the ends together so each cookie forms a small wreath. Dip one side in egg white and sugar. Bake on tray for approx 10 min in 175 C.

NB! Be sure to keep the dough cool, or it will be difficult to handle!
